Salad a la jungle [8] (Part 2)

As summer eases into autumn on a balmy Wednesday afternoon, nothing quite beats a nutritious jungle [8] lunch. Today’s culinary adventure was a filling tuna melt (made using soy cheese!) and one of lainie’s famous salads. The melt itself consisted of tuna salad (mixed with tangy red pepper, chunks of sweet green apple, tiny green onions, and crisp celery) served toasted on a slice of bread and topped with juicy tomato slices and melted soy cheese. The side salad was equally delectable, featuring a diverse mixture of cucumber, red pepper, mushrooms, celery, tomatoes, onions, thinly sliced apples, and walnuts resting on a bed of spinach and lettuce. As usual, the natives topped the salad off with “goddess” dressing from Trader Joe’s (with the exception of Nora, who prefers a little olive oil and balsamic vinegar). The colorful lunch laid the foundation for even more colorful conversation, as the denizens of jungle [8] discussed a variety of topics ranging from Daniela’s weekend excursions looking for a friend’s wedding dress to lainie’s reoccurring attraction to “The Logical Song,” an epic 70’s power ballad by Supertramp. As usual, the jungle [8] staff returned to work freshly invigorated, with full bellies and a newfound sense of purpose–as well as an extremely catchy song stuck in their heads.
